Ingredients

  • 9 -12 servings
  • 1/2 cup salted butter (about 113g)
  • 1 tablespoon oil
  • 1 cup (or slightly less) caster sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup gluten free plain flour
  • 1 tsp gluten free baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt

Steps

  1. Heat oven to 175 degrees C (fan).
  2. Prepare 8 inch square baking dish by brushing with oil and line with baking paper.
  3. Heat butter on the hob until it starts to bubble slightly, then add to mixing bowl of K-MIx (or food processor) with the oil and sugar and beat for minute.
  4. Add eggs and vanilla and beat for another minute.
  5. Sift in flour, baking powder and cocoa powder to the mixing bowl and add salt, then fold together until just about mixed. Too much mixing will change texture towards a cake rather than a fudgy brownie.
  6. Tip into baking dish and cook for 20mins.
  7. Allow to cool for about 5 mins before transferring from baking dish to cooling rack along with the baking paper. Allow to cool a little more before slicing into 9 large pieces or smaller sections.

Brownie Cookie Recipe

Ingredients

  • 4 dozen cookies
  • 2/3 cup Flour
  • 2 Tb Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 cup Semisweet Chocolate Chips
  • 1/4 cup Unsalted Butter
  • 2 large Eggs
  • 1/2 cup Sugar
  • 1/2 cup Light Brown Sugar

Steps

  • Preheat oven to 350°F and line two quarter sheet baking sheets with Silpats or parchment paper.
  • Whisk together flour, cocoa, baking powder, and salt in a small bowl.
  • Place 2 1/2 cups of the semisweet chocolate chips and butter in a saucepan. Slowly melt the chocolate, stirring occasionally until smooth. Remove from the heat and set aside to cool slightly.
  • Combine eggs and sugars in a medium and use a mixer to blend on medium speed for 5 minutes. Reduce speed to low, beat in melted chocolate for 1 minute. Add flour mixture and mix on low speed for 20 seconds until combined. Fold in chocolate chips.
  • Use a 1/2 Tb measuring spoon to form the cookies, spacing cookies 3 inches apart.
  • Bake for 12 to 14 minutes, rotating pans halfway through until tops are shiny and crackly. Remove from oven and place cookies on a cooling rack and enjoy!
